Why We Harvest by Lantern Light

Vespera picks at night. Not for effect — because the fruit is measurably different at 2am than it is at 2pm, and for the Pinot Noir and Chardonnay coming off our ridge above the Pacific, that difference is worth losing a night’s sleep over every harvest.

What heat does to a cluster

Grapes picked in the heat of the day arrive at the crush pad already warm, and warm fruit starts its chemistry moving faster than a winemaker necessarily wants — sugars and acids shifting, delicate aromatics beginning to volatilize off before the fruit is even off the truck. Cold fruit, picked while the fog is still sitting on the ridge, arrives at close to the same temperature it needs to be for a slow, controlled start to fermentation.

Why lantern light, specifically

Night-picking a hillside vineyard by headlamp and lantern is slower and more careful work than picking in daylight — pickers can’t rely on ambient light to judge a cluster at a glance, so they’re working closer, feeling for ripeness and rot as much as seeing it. It’s harder on the crew, and it’s also the reason the fruit that comes off a night pick tends to be sorted more conservatively; you don’t take chances on a cluster you can’t see clearly.

Not every vintage needs it the same way

How early in the night picking starts, and how much of the vineyard gets the night treatment versus an early-morning pick, changes from year to year depending on how the fog is behaving that particular harvest. Some vintages the fog holds late enough that a 5am start achieves nearly the same cold fruit without a full overnight crew. We adjust to what the ridge is actually doing rather than picking at the same hour out of habit.

The wines that come off these night-picked blocks are what’s currently in the tasting room — reserve a tasting and ask what was picked after dark.
